Dinner recipe: Seafood Risotto
New Year´s dinner ours family cooked Seafood Risotto.
Dinner basic recipe : Seafood Risotto.
500 ml vegetable or chicken soup
1 tablespoon butter
Chopping 1 medium onion and 1 garlic
1 medium zucchini
400 gr Risotto rice Arborio, Avorio, Carnaroli, Vialone.
Get ready in 30 min.
Prepare vegetable or chicken soup. Melt butter in a large, heavy bottomed pan over medium heat. To give chopped onions and garlic a stir in butter and roast for 2 minutes, or until softened.Add the rice and roast for 2 minutes after add soup and cook. Again and again add soup, don’t forgot stirring constantly. Afterwards add zucchini, tomatoes.
When almost finished, add shell. Risotto will become “creamy” and slightly sticky, yet still firm in the centre, or al dente. Stir in basil just before serving.
Divide risotto among 4 bowls, sprinkle with remaining parmigiano cheese, and season with pepper to taste.
You can instead zucchini or shell take mushroom, bean or cube meat.
